We'll meet at the Plaza de la Independencia at 9 am to begin our gastronomic tour of Callao, a key port city in South America during the viceregal era.

First, we'll visit the Rovira restaurant for a snack of bread and traditional pejerrey, a typical local fish, which is a key ingredient in many South Pacific dishes.

Next, we'll board a boat to explore the port of Callao, taking in views of the historical fortress of Real Felipe before arriving in the Chucuito neighborhood.

Once we disembark, we'll visit the Mirador de la Rivera restaurant, where the owners will share ingredients for dishes like ceviche chalaco and teach us how to prepare it, providing insights into the region's culinary skills.

Following the demonstration, we'll enjoy a seafood lunch.

Finally, the tour concludes with a salsa class featuring live music. We'll return to the original meeting point at 2 pm.
