Cartagena de Indias Paila Ice Cream Workshop

In this workshop in Cartagena de Indias, participants will learn how to make paila ice cream using the traditional method. Upon arrival, you will meet at the Plaza de la Trinidad and walk to a popular local shop where the ice cream is prepared.

The ice cream parlour, operated exclusively by women and using ecological materials, specializes in preparing ice creams with a paila, a traditional metal pan with a large diameter and shallow depth. During the preparation, you will learn about the history of paila ice creams, which originated from Ecuador and are also popular in Pasto, the capital of Nariño in Colombia.

Participants will create ice creams in an artisan manner using fruit or milk, with only natural and organic ingredients. At the end of the workshop, there will be an opportunity to taste three different paila ice creams.

The duration of the workshop is between one and a half and two hours. After the experience, assistance back to the meeting point will be provided, or you may choose to stay longer at the venue to sample other ice creams independently.
