In this demonstration of how to make Genoese pesto, you'll see how one of Italy's most popular sauces is prepared in the iconic Palazzi dei Rolli.
Description
At the indicated time, we'll meet on the second floor of the Palazzo Imperiale, located at Piazza Campetto 8A. From this central area in Genoa, we will walk to the Palazzo dei Rolli, a UNESCO World Heritage Site.
We'll explore the main rooms in the palace and then learn how to make Genovian pesto, also known as pesto alla genovese, originating from the province of Liguria. This sauce is widely used with various dishes, such as pasta, pizzas and appetizers.
During the workshop, a chef will prepare authentic Genoese pesto, guiding us through the process from ingredient selection to recipe execution. The key ingredients include basil, garlic, cheese and pine nuts.
After the preparation, we will enjoy pesto pasta with focaccia and a glass of Ligurian wine. After 3 hours of the workshop, we'll conclude and receive a certificate for participation at the entrance to the palace.
