In this demonstration of how to make Genoese pesto, you will learn to prepare one of Italy's popular sauces in the iconic Palazzi dei Rolli.
Description
At the designated time, we will meet on the second floor of the Palazzo Imperiale, located at Piazza Campetto 8A. From this central location in Genoa, we will walk to the Palazzo dei Rolli, recognized as a World Heritage Site.
We will explore the main rooms of the palace and learn to make Genovian pesto, or pesto alla genovese, a recipe from the province of Liguria commonly used with pasta, pizzas, and appetizers.
During the workshop, a chef will prepare authentic Genoese pesto. We will learn the preparation process step-by-step, from selecting ingredients to combining them in the recipe. Key ingredients include basil, garlic, cheese, and pine nuts.
Once prepared, we will enjoy the pesto with pasta, focaccia, and a glass of Ligurian wine. After 3 hours of culinary experience, we will conclude the workshop at the palace entrance, where a certificate of participation will be provided.
