In this demonstration of how to make Genoese pesto, you will see the preparation of one of Italy's popular sauces in the iconic Palazzi dei Rolli.

Description

We will meet at the designated time on the second floor of the Palazzo Imperiale, located at Piazza Campetto 8A. From there, we will walk to the renowned Palazzo dei Rolli, a recognized World Heritage Site.

During the visit, we will explore the main rooms of the palace and learn to make Genovian pesto, also known as pesto alla genovese, a recipe from the province of Liguria that complements dishes such as pasta, pizzas, and appetizers. It is among the most popular sauces worldwide.

In the workshop, a chef will demonstrate the preparation of authentic Genoese pesto. Participants will learn step-by-step about the ingredients and their integration into the recipe, focusing on essentials like basil, garlic, cheese, and pine nuts.

At the end, we will enjoy pesto pasta with focaccia and a glass of Ligurian wine. After 3 hours of culinary activities, the workshop will conclude at the palace entrance, where a certificate will be provided for participation.
