In this demonstration of how to make Genoese pesto, you'll see how one of Italy's most popular sauces is prepared in the iconic Palazzi dei Rolli.

Description

At the specified time, we'll meet on the second floor of the Palazzo Imperiale, located at Piazza Campetto 8A. From there, we will walk to Palazzo dei Rolli, a UNESCO World Heritage Site.

We will explore the main rooms in the palace and then learn how to make Genovian pesto, also known as pesto alla genovese. This recipe originates from the province of Liguria and is commonly used with dishes such as pasta, pizzas, and appetizers.

During the workshop, a chef will prepare authentic Genoese pesto. We will learn the preparation process step-by-step, from ingredient selection to recipe incorporation, highlighting basil, garlic, cheese, and pine nuts.

Once everything is prepared, we will enjoy pesto pasta with focaccia and a glass of Ligurian wine. After 3 hours of culinary activities, we will conclude the workshop at the palace entrance, where each participant will receive a certificate for the activity.
