In this demonstration of how to make Genoese pesto, you'll learn about one of Italy's popular sauces prepared in the Palazzi dei Rolli.

Description

At the indicated time, we'll meet on the second floor of the Palazzo Imperiale, located at Piazza Campetto 8A. From this central area in Genoa, we'll walk to the Palazzo dei Rolli, a World Heritage Site.

We'll explore the main rooms in the palace and learn how to make Genovian pesto, also known as pesto alla genovese, a recipe from the province of Liguria widely used to accompany dishes such as pasta, pizzas, and appetizers.

During the workshop, a chef will prepare authentic Genoese pesto. We'll learn about this sauce step-by-step, from ingredient selection to recipe incorporation, focusing on basil, garlic, cheese, and pine nuts.

Once ready, we'll enjoy pesto pasta with focaccia and a glass of Ligurian wine.

After 3 hours of culinary activity, we will conclude the workshop at the entrance to the palace, where you'll receive a certificate for participation.
