Traditional Amazonian cooking workshop

This workshop offers an immersive experience in Amazonian gastronomy, characterized by its unique use of fish, fruits, and vegetables such as yucca, plantain, and chonta, readily available in the Peruvian jungle.

Participants will meet at 8 am at Hospedaje Los Incas to begin the journey. The first stop will be a local farm or plantation to select the best fruits and vegetables for the dishes. Following this, a visit to the local market will allow participants to choose fresh ingredients for cooking.

Upon returning, participants will apply their chef skills to create two starters, two main courses, and a dessert while learning about the history of Amazonian gastronomy and the properties of each ingredient. The starters include Amazonian ceviche and chonta or palm heart salad. Main course options consist of fish casserole, patarashca, tacacho, and inchicapi. The dessert will be revealed during the activity.

After approximately 2 and a half hours of cooking, participants will enjoy the dishes they prepared, complemented by a refreshing fruit drink. The workshop concludes after lunch at 3 pm.
